- 1 tsp dried thyme
- 1 bay leaf

Instructions
- In a large pot over medium heat, drizzle olive oil and sauté the diced onions, carrots, and celery until softened (about 5 minutes).
- Add minced garlic, thyme, and bay leaf; stir for another minute.
- Pour in vegetable broth and add pearl barley. Bring to a boil, then reduce heat to a simmer for about 30 minutes.
- During the last 10 minutes of cooking, stir in spinach or kale.
- Season with salt and pepper to taste before serving warm.
