Description

Macaron Shells

  • 1 cup almond flour
  • 1 ¾ cups powdered sugar
  • 1 tablespoon unsweetened cocoa powder
  • 3 large egg whites, room temperature
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • Red gel food coloring

Filling

  • ½ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk or cream
  • ½ teaspoon vanilla extract

Instructions

  1. Sift almond flour, powdered sugar, and cocoa powder together into a bowl.
  2. In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar and beat to stiff, glossy peaks.
  3. Mix in vanilla extract and red food coloring.
  4. Gently fold dry ingredients into egg whites until batter flows smoothly and slowly (lava-like consistency).
  5. Transfer batter to a piping bag and pipe small circles onto a parchment-lined baking sheet.
  6. Tap the baking sheet firmly to release air bubbles and let macarons rest for 30–40 minutes until tops are dry.
  7. Bake at 300°F (150°C) for 15–18 minutes. Cool completely.
  8. Beat filling ingredients until smooth and creamy.
  9. Pipe filling onto one shell and sandwich with another.
  10. Refrigerate filled macarons for 24 hours before serving for best texture
