Macaron Shells
- 1 cup almond flour
- 1 ¾ cups powdered sugar
- 1 tablespoon unsweetened cocoa powder
- 3 large egg whites, room temperature
- ¼ cup granulated sugar
- ½ teaspoon vanilla extract
- Red gel food coloring
Filling
- ½ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tablespoon milk or cream
- ½ teaspoon vanilla extract
Instructions
- Sift almond flour, powdered sugar, and cocoa powder together into a bowl.
- In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar and beat to stiff, glossy peaks.
- Mix in vanilla extract and red food coloring.
- Gently fold dry ingredients into egg whites until batter flows smoothly and slowly (lava-like consistency).
- Transfer batter to a piping bag and pipe small circles onto a parchment-lined baking sheet.
- Tap the baking sheet firmly to release air bubbles and let macarons rest for 30–40 minutes until tops are dry.
- Bake at 300°F (150°C) for 15–18 minutes. Cool completely.
- Beat filling ingredients until smooth and creamy.
- Pipe filling onto one shell and sandwich with another.
- Refrigerate filled macarons for 24 hours before serving for best texture
