Description

Valentine Strawberry Yogurt Shortcake is a light, fresh twist on the classic dessert, made with fluffy shortcake layers, creamy yogurt filling, and juicy strawberries. Naturally sweet and beautifully romantic, it’s perfect for a healthier Valentine’s Day treat.

Shortcake

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup plain or vanilla yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract

Strawberry Filling

  • 2 cups fresh strawberries, sliced
  • 2 tablespoons honey or maple syrup

Yogurt Cream

  • 1 cup Greek yogurt
  • 2 tablespoons honey or powdered sugar
  • ½ teaspoon vanilla extrac

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. Cut butter into dry ingredients until mixture resembles coarse crumbs.
  4. Stir in yogurt, egg, and vanilla extract until just combined.
  5. Scoop dough into heart-shaped mounds or shape gently by hand.
  6. Bake for 14–16 minutes until lightly golden. Cool completely.
  7. Toss strawberries with honey or maple syrup and set aside.
  8. Mix Greek yogurt with honey and vanilla extract until smooth.
  9. Slice shortcakes in half, layer with yogurt cream and strawberries, and top with the remaining shortcake.
