- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ¾ cup plain or vanilla yogurt
- 1 large egg
- 1 teaspoon vanilla extract
Strawberry Filling
- 2 cups fresh strawberries, sliced
- 2 tablespoons honey or maple syrup
Yogurt Cream
- 1 cup Greek yogurt
- 2 tablespoons honey or powdered sugar
- ½ teaspoon vanilla extrac
Instructions
- Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
- In a bowl, whisk flour, sugar, baking powder, and salt.
- Cut butter into dry ingredients until mixture resembles coarse crumbs.
- Stir in yogurt, egg, and vanilla extract until just combined.
- Scoop dough into heart-shaped mounds or shape gently by hand.
- Bake for 14–16 minutes until lightly golden. Cool completely.
- Toss strawberries with honey or maple syrup and set aside.
- Mix Greek yogurt with honey and vanilla extract until smooth.
- Slice shortcakes in half, layer with yogurt cream and strawberries, and top with the remaining shortcake.
