Rose Cream

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon rose water

Chocolate Layer

  • 4 oz dark chocolate, chopped or shaved

Optional Garnish

  • Dried rose petals
  • Dark chocolate curls

Instructions

  1. In a saucepan over medium heat, combine rhubarb, sugar, and water.
  2. Simmer for 8–10 minutes until rhubarb breaks down and thickens. Remove from heat and stir in vanilla extract. Let cool completely.
  3. In a bowl, whip heavy cream with powdered sugar and rose water until soft peaks form.
  4. Prepare parfait glasses or jars.
  5. Layer rhubarb compote, rose cream, and dark chocolate.
  6. Repeat layers until glasses are filled.
  7. Chill for at least 30 minutes before serving.
  8. Garnish with rose petals or chocolate curls if desired.
