Rose Cream
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- ½ teaspoon rose water
Chocolate Layer
- 4 oz dark chocolate, chopped or shaved
Optional Garnish
- Dried rose petals
- Dark chocolate curls
Instructions
- In a saucepan over medium heat, combine rhubarb, sugar, and water.
- Simmer for 8–10 minutes until rhubarb breaks down and thickens. Remove from heat and stir in vanilla extract. Let cool completely.
- In a bowl, whip heavy cream with powdered sugar and rose water until soft peaks form.
- Prepare parfait glasses or jars.
- Layer rhubarb compote, rose cream, and dark chocolate.
- Repeat layers until glasses are filled.
- Chill for at least 30 minutes before serving.
- Garnish with rose petals or chocolate curls if desired.
