Description

Valentine Raspberry Black Tea Scones are tender, buttery scones infused with fragrant black tea and studded with juicy raspberries. Elegant and lightly sweet, these scones are perfect for Valentine’s Day brunch, afternoon tea, or a romantic breakfast.


Ingredients

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 2 black tea bags (leaves removed)
  • ½ cup cold unsalted butter, cubed
  • ¾ cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup fresh or frozen raspberries

Optional Glaze

  • 1 cup powdered sugar
  • 12 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and black tea leaves.
  3. Cut cold butter into dry ingredients using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. In a small bowl, whisk heavy cream, egg, and vanilla extract.
  5. Add wet ingredients to dry ingredients and mix gently until just combined.
  6. Carefully fold in raspberries.
  7. Turn dough out onto a floured surface, shape into a circle, and cut into 8 wedges.
  8. Place scones on baking sheet and bake for 15–18 minutes until lightly golden.
  9. Cool slightly and drizzle with glaze if desired.
