- 2 cups all-purpose flour
- ⅓ cup granulated sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 2 black tea bags (leaves removed)
- ½ cup cold unsalted butter, cubed
- ¾ cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- ¾ cup fresh or frozen raspberries
Optional Glaze
- 1 cup powdered sugar
- 1–2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and black tea leaves.
- Cut cold butter into dry ingredients using a pastry cutter or fingers until mixture resembles coarse crumbs.
- In a small bowl, whisk heavy cream, egg, and vanilla extract.
- Add wet ingredients to dry ingredients and mix gently until just combined.
- Carefully fold in raspberries.
- Turn dough out onto a floured surface, shape into a circle, and cut into 8 wedges.
- Place scones on baking sheet and bake for 15–18 minutes until lightly golden.
- Cool slightly and drizzle with glaze if desired.
