Chocolate Cupcakes
- 1 ¼ cups all-purpose flour
- ½ cup unsweetened cocoa powder

- ½ teaspoon baking powder

- ¾ cup granulated sugar
- ½ cup milk
- ½ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Strawberry Frosting
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- ¼ cup strawberry purée or strawberry jam
- ½ teaspoon vanilla extract
Topping
- 6–8 fresh strawberries
- ½ cup melted semi-sweet chocolate
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix sugar, milk, oil, egg, and vanilla extract until smooth.
- Add dry ingredients to wet ingredients and mix until just combined.
- Divide batter evenly among liners, filling about ⅔ full.
- Bake for 18–20 minutes until a toothpick inserted comes out clean. Cool completely.
- Beat frosting ingredients until smooth and fluffy.
- Dip strawberries halfway into melted chocolate and let set.
- Pipe frosting onto cooled cupcakes and top each with a chocolate-covered strawberry.
