Description

Chocolate Cupcakes

  • 1 ¼ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup milk
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Strawberry Frosting

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • ¼ cup strawberry purée or strawberry jam
  • ½ teaspoon vanilla extract

Topping

  • 68 fresh strawberries
  • ½ cup melted semi-sweet chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix sugar, milk, oil, egg, and vanilla extract until smooth.
  4. Add dry ingredients to wet ingredients and mix until just combined.
  5. Divide batter evenly among liners, filling about ⅔ full.
  6. Bake for 18–20 minutes until a toothpick inserted comes out clean. Cool completely.
  7. Beat frosting ingredients until smooth and fluffy.
  8. Dip strawberries halfway into melted chocolate and let set.
  9. Pipe frosting onto cooled cupcakes and top each with a chocolate-covered strawberry.
