- 4 small sugar pumpkins
- 1 lb ground turkey
- 1/4 cup fresh sage, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Rinse the sugar pumpkins and slice off the tops. Scoop out the seeds.
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until translucent.
- Add ground turkey and chopped sage; cook until turkey is no longer pink (about 5-7 minutes). Stir in breadcrumbs and Parmesan cheese until combined.
- Stuff each pumpkin with the turkey mixture, placing them upright in a baking dish with half an inch of water.
- Cover with aluminum foil and bake for 30-35 minutes. Remove foil for the last 10 minutes to brown the tops.
