- 2 tbsp kosher salt
- 1 tsp black pepper
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 3 sprigs fresh sage
- 1 lemon (zest and juice)
- 6 cloves garlic (minced)
- 1/2 cup melted butter
Instructions
- Preheat oven to 450°F (230°C). Place the turkey breast-side down on a cutting board and cut along each side of the backbone to remove it.
- Flip the turkey over and press down on the breastbone until it flattens.
