  • 1 whole turkey (1214 lbs)
  • 1/4 cup olive oil
  • 2 tbsp kosher salt
  • 1 tsp black pepper
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 3 sprigs fresh sage
  • 1 lemon (zest and juice)
  • 6 cloves garlic (minced)
  • 1/2 cup melted butter

Instructions

  1. Preheat oven to 450°F (230°C). Place the turkey breast-side down on a cutting board and cut along each side of the backbone to remove it.
  2. Flip the turkey over and press down on the breastbone until it flattens.
  3. Rub olive oil over the turkey, seasoning generously with salt, pepper, and herbs. Tuck some herbs under the skin for added flavor.
  4. In a bowl, mix melted butter with minced garlic and lemon juice/zest; brush this mixture over the turkey.
  5. Place the turkey on a rack in a roasting pan and roast for approximately 1 hour or until it reaches an internal temperature of 165°F (74°C).
