- 12–14 lb whole turkey
- 1 cup unsalted butter, softened
- 1/4 cup fresh thyme, chopped
- 1/4 cup fresh rosemary, chopped
- 1/4 cup fresh sage, chopped
- 1 whole lemon, quartered
- 6 cloves garlic, crushed
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (165°C) and prepare a roasting pan.
- In a bowl, mix softened butter with thyme, rosemary, sage, garlic, salt, and pepper.
- Pat the turkey dry; season inside and out with salt and pepper. Gently loosen the skin on the breast and spread half of the herb butter underneath.
- Stuff the cavity with lemon quarters and any remaining herb sprigs.
- Rub the remaining herb butter over the exterior of the turkey; tent with foil.
- Roast for about 13-15 minutes per pound until cooked through (165°F in the thickest part of the thigh). Remove foil during the last hour for crispy skin.
