  • 1214 lb whole turkey
  • 1 cup unsalted butter, softened
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh sage, chopped
  • 1 whole lemon, quartered
  • 6 cloves garlic, crushed
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (165°C) and prepare a roasting pan.
  2. In a bowl, mix softened butter with thyme, rosemary, sage, garlic, salt, and pepper.
  3. Pat the turkey dry; season inside and out with salt and pepper. Gently loosen the skin on the breast and spread half of the herb butter underneath.
  4. Stuff the cavity with lemon quarters and any remaining herb sprigs.
  5. Rub the remaining herb butter over the exterior of the turkey; tent with foil.
  6. Roast for about 13-15 minutes per pound until cooked through (165°F in the thickest part of the thigh). Remove foil during the last hour for crispy skin.
