  • 2 lbs medium sweet potatoes, peeled and sliced into 1/8-inch rounds
  • 2 cups fresh cranberries
  • 1 cup heavy cream
  • 4 tbsp unsalted butter, melted
  • 1/4 cup light brown sugar
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • 1 cup panko breadcrumbs (optional; mix with 1/4 cup grated Parmesan cheese)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Layer half of the sweet potato slices at the bottom of the prepared dish, followed by half of the cranberries. Repeat layers.
  3. In a bowl, whisk together heavy cream, melted butter, brown sugar, and thyme. Pour evenly over layered vegetables.
  4. Mix panko breadcrumbs with melted butter (and Parmesan if using) and sprinkle over the top.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 20-25 minutes until golden brown.
