- 2 lbs medium sweet potatoes, peeled and sliced into 1/8-inch rounds
- 2 cups fresh cranberries
- 1 cup heavy cream
- 4 tbsp unsalted butter, melted
- 1/4 cup light brown sugar
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- 1 cup panko breadcrumbs (optional; mix with 1/4 cup grated Parmesan cheese)
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a 9×13 inch baking dish with nonstick cooking spray.
- Layer half of the sweet potato slices at the bottom of the prepared dish, followed by half of the cranberries. Repeat layers.
- In a bowl, whisk together heavy cream, melted butter, brown sugar, and thyme. Pour evenly over layered vegetables.
- Mix panko breadcrumbs with melted butter (and Parmesan if using) and sprinkle over the top.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 20-25 minutes until golden brown.
