  • 8 oz penne pasta
  • 1 lb Swedish meatballs (store-bought or homemade)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup low-sodium beef broth
  • 1 tsp garlic powder
  • 2 cups shredded sharp cheddar cheese (divided)

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Cook the penne pasta according to package instructions until al dente, drain, and set aside.
  3. In a mixing bowl, combine the cream of mushroom soup, sour cream, beef broth, garlic powder, and half the cheddar cheese; mix until smooth.
  4. In a large bowl, combine the cooked pasta and half the meatballs with the creamy sauce; toss well.
  5. Layer half of the pasta mixture in the baking dish, add remaining meatballs, then top with the rest of the pasta mixture. Sprinkle with remaining cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden brown.
