  • 2 cups fresh rhubarb, diced
  • ¾ cup granulated sugar (adjust to taste)
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 1 tsp ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine strawberries, rhubarb, and sugar; let sit while preparing the crust.
  3. In another bowl, mix flour, sugar, cinnamon, and cold butter until crumbly; reserve one cup of this mixture for topping.
  4. Press remaining crumbs into the bottom of the prepared pan. Pour the fruit filling over it and sprinkle with reserved crumbs.
  5. Bake for 45-50 minutes until golden brown and bubbly. Let cool completely before slicing.
