- 1 cup ripe bananas, mashed (about 2 medium)
- ¾ cup fresh strawberries, diced
- ¼ cup honey or maple syrup
- ¼ cup melted coconut oil or butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine mashed bananas, honey (or maple syrup), melted oil, egg, and vanilla extract.
- Stir in oats, baking powder, cinnamon, and salt until well combined.
- Gently fold in the diced strawberries.
- Spread the mixture evenly into the prepared pan and press down firmly.
- Bake for 28–32 minutes, or until the edges are lightly golden and the center is set.
- Allow to cool completely before slicing into bars.
