  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 4 flour tortillas (10-inch)
  • Lime wedges and chopped cilantro for garnish

Instructions

  1. In a bowl, mix olive oil, chili powder, cumin, salt, and pepper. Coat the flank steak with the marinade and refrigerate for at least 1 hour.
  2. While the steak marinates, slice the bell peppers and onion into thin strips.

  4. In the same skillet, sauté the bell peppers and onions until tender (about 5-7 minutes).
  5. Slice the rested steak against the grain into thin strips. Warm tortillas in another pan or directly over an open flame.
  6. Assemble by placing veggies and steak on each tortilla; garnish with lime wedges and cilantro before serving.
