Ingredients
Scale
- 1 lb flank steak
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp salt
- ½ tsp black pepper
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 4 flour tortillas (10-inch)
- Lime wedges and chopped cilantro for garnish
Instructions
- In a bowl, mix olive oil, chili powder, cumin, salt, and pepper. Coat the flank steak with the marinade and refrigerate for at least 1 hour.
- While the steak marinates, slice the bell peppers and onion into thin strips.
- Heat a cast-iron skillet over medium-high heat and sear the steak for about 4-5 minutes on each side until it reaches your desired doneness. Let it rest before slicing.
- In the same skillet, sauté the bell peppers and onions until tender (about 5-7 minutes).
- Slice the rested steak against the grain into thin strips. Warm tortillas in another pan or directly over an open flame.
- Assemble by placing veggies and steak on each tortilla; garnish with lime wedges and cilantro before serving.
