Ingredients

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups russet potatoes, peeled and diced
  • 4 cups beef broth
  • 1 cup milk or half-and-half
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon cornstarch
  • Optional toppings: shredded cheese, green onions, sour cream

Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add steak pieces and sear until browned. Remove and set aside.
  3. In the same pot, add onion and cook until softened, about 4 minutes.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add potatoes, beef broth, salt, pepper, and paprika. Bring to a boil.
  6. Reduce heat and simmer for 15–18 minutes until potatoes are tender.
  7. Whisk cornstarch with milk and stir into the soup.
  8. Return steak to the pot and simmer for 5 minutes until slightly thickened.
  9. Adjust seasoning and serve hot with optional toppings
