- 1 lb sirloin steak, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups russet potatoes, peeled and diced
- 4 cups beef broth
- 1 cup milk or half-and-half
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon cornstarch
- Optional toppings: shredded cheese, green onions, sour cream
Instructions
- Heat olive oil and butter in a large pot over medium heat.
- Add steak pieces and sear until browned. Remove and set aside.
- In the same pot, add onion and cook until softened, about 4 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add potatoes, beef broth, salt, pepper, and paprika. Bring to a boil.
- Reduce heat and simmer for 15–18 minutes until potatoes are tender.
- Whisk cornstarch with milk and stir into the soup.
- Return steak to the pot and simmer for 5 minutes until slightly thickened.
- Adjust seasoning and serve hot with optional toppings
