- 200g firm tofu (cubed)
- 2 tbsp sriracha sauce (adjust for heat)
- 2 tsp ginger (minced)
- 2 tsp garlic (minced)
- 2 green onions (sliced)
- 1 tbsp sesame seeds
Instructions
- Prepare your ingredients by chopping vegetables and mincing ginger and garlic.
- In a pan over medium heat, add oil and cook cubed tofu until golden brown, about 5 minutes.
- Add minced ginger and garlic; sauté for another minute until fragrant.
- Pour in vegetable broth and bring to a boil. Add chopped veggies and sriracha sauce; simmer for about 10 minutes.
- Cook soba noodles separately according to package instructions until al dente.
- Drain noodles and combine with the broth and veggies in the pot. Stir well to blend flavors.
