  • 4 cups vegetable broth
  • 200g soba noodles
  • 1 cup bell peppers (sliced)
  • 1 cup carrots (sliced)
  • 1 cup bok choy (chopped)
  • 200g firm tofu (cubed)
  • 2 tbsp sriracha sauce (adjust for heat)
  • 2 tsp ginger (minced)
  • 2 tsp garlic (minced)
  • 2 green onions (sliced)
  • 1 tbsp sesame seeds

Instructions

  1. Prepare your ingredients by chopping vegetables and mincing ginger and garlic.
  2. In a pan over medium heat, add oil and cook cubed tofu until golden brown, about 5 minutes.
  3. Add minced ginger and garlic; sauté for another minute until fragrant.
  4. Pour in vegetable broth and bring to a boil. Add chopped veggies and sriracha sauce; simmer for about 10 minutes.
  5. Cook soba noodles separately according to package instructions until al dente.
  6. Drain noodles and combine with the broth and veggies in the pot. Stir well to blend flavors.
  7. Serve in bowls, topped with green onions and sesame seeds.
