- 1 ½ lbs boneless, skinless chicken thighs, cut into chunks
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1–2 teaspoons chili paste or red chili flakes (to taste)
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 (13.5 oz) can coconut milk
- 1 tablespoon tomato paste
- Juice of ½ lime
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened, about 4 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add chicken pieces and cook until lightly browned on all sides.
- Stir in bell pepper, chili paste (or flakes), paprika, cumin, salt, and black pepper.
- Add tomato paste and coconut milk, stirring until well combined.
- Bring to a gentle simmer, then reduce heat and cook for 18–22 minutes until chicken is cooked through and sauce has thickened.
- Stir in lime juice and adjust seasoning if needed.
- Garnish with fresh cilantro and serve warm over rice.
