Description

  • 1 ½ lbs boneless, skinless chicken thighs, cut into chunks
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 12 teaspoons chili paste or red chili flakes (to taste)
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (13.5 oz) can coconut milk
  • 1 tablespoon tomato paste
  • Juice of ½ lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until softened, about 4 minutes.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add chicken pieces and cook until lightly browned on all sides.
  5. Stir in bell pepper, chili paste (or flakes), paprika, cumin, salt, and black pepper.
  6. Add tomato paste and coconut milk, stirring until well combined.
  7. Bring to a gentle simmer, then reduce heat and cook for 18–22 minutes until chicken is cooked through and sauce has thickened.
  8. Stir in lime juice and adjust seasoning if needed.
  9. Garnish with fresh cilantro and serve warm over rice.
