  • 2 cups low-sodium vegetable broth
  • 2 medium carrots (diced)
  • 1 medium onion (diced)
  • 2 tsp cumin

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water in a fine-mesh strainer.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Stir in diced carrots and cook until slightly softened.
  4. Add cumin and cinnamon; cook for 1 minute until fragrant.
  5. Mix in rinsed quinoa and vegetable broth; bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed.
  7. Remove from heat and let sit covered for another 5 minutes before fluffing with a fork.
