Ingredients
Scale
- 1 cup quinoa
- 2 cups water or vegetable broth
- 2 cups shredded red cabbage

- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon (about 3 tbsp)
- 3 tbsp extra virgin olive oil

- Once quinoa cools slightly, fluff it with a fork in a large bowl. Add red cabbage, grated carrot, cucumber, and parsley.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Adjust seasoning to taste.
