  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 1 white onion, diced
  • 2 poblano peppers, roasted and diced
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 4 cups low-sodium chicken broth
  • 2 cups canned corn hominy, rinsed

Instructions

  1. Prepare the ingredients by dicing the onion and garlic; roast the poblano peppers until blistered.
  2. In a large pot over medium heat, add olive oil. Sauté the onion and garlic for about 2 minutes. Then add chicken breasts and broth; simmer for about 20 minutes until chicken is cooked through.
  3. Remove the chicken, shred it using two forks, then blend roasted poblano peppers with some broth until smooth.
  4. Return shredded chicken to the pot along with hominy and blended sauce; simmer for another 10 minutes.
  5. Serve hot in bowls topped with chopped cilantro, sliced radishes, and lime wedges.
