Ingredients
- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 4 cloves fresh garlic, minced
- 1 white onion, diced
- 2 poblano peppers, roasted and diced
- 1 cup fresh cilantro, chopped
- Juice of 2 limes
- 4 cups low-sodium chicken broth
- 2 cups canned corn hominy, rinsed
Instructions
- Prepare the ingredients by dicing the onion and garlic; roast the poblano peppers until blistered.
- In a large pot over medium heat, add olive oil. Sauté the onion and garlic for about 2 minutes. Then add chicken breasts and broth; simmer for about 20 minutes until chicken is cooked through.
- Remove the chicken, shred it using two forks, then blend roasted poblano peppers with some broth until smooth.
- Return shredded chicken to the pot along with hominy and blended sauce; simmer for another 10 minutes.
- Serve hot in bowls topped with chopped cilantro, sliced radishes, and lime wedges.
