  • 4 large flour tortillas
  • 1 lb ribeye steak, thinly sliced
  • 1 cup bell peppers (mixed colors), diced
  • 1 cup sweet onions, diced
  • 1 cup provolone cheese, shredded
  • 2 tsp Worcestershire sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Slice the ribeye steak into thin strips and chop the bell peppers and onions.
  2. Heat olive oil in a skillet over medium heat. Sauté the onions and bell peppers until tender (about 5 minutes).
  3. Push veggies aside and add the ribeye strips to the skillet. Season with salt, pepper, and Worcestershire sauce; cook until browned (3-4 minutes).
  4. In another non-stick skillet, place one tortilla flat, sprinkle half with provolone cheese, top with half of the steak mixture, and fold.
  5. Grill on medium heat until golden brown on both sides (about 2 minutes each side). Slice into wedges and serve with sour cream.
