- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1/2 cup freshly squeezed lime juice (approximately 4 limes)
- 1/2 cup fresh cilantro, chopped
- 2 cups long-grain rice
- 1/4 cup low-sodium soy sauce
- 3 cups chicken broth
Instructions
- 1. Preheat oven to 400°F (200°C).
- 2. In an oven-safe skillet, spray with nonstick cooking spray and heat over medium. Season chicken with salt and pepper; add to skillet.
- 3. Sauté chicken until browned on both sides, then add minced garlic. Cook for about 1 minute until fragrant.
- 4. Pour in lime juice and soy sauce; stir well.
- 5. Add rice around chicken and pour chicken broth over everything.
- 6. Cover skillet with a lid or aluminum foil; bake for 25-30 minutes until rice is tender.
- 7. Stir in chopped cilantro before serving; drizzle with extra lime juice if desired.
