Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup freshly squeezed lime juice (approximately 4 limes)
  • 1/2 cup fresh cilantro, chopped
  • 2 cups long-grain rice
  • 1/4 cup low-sodium soy sauce
  • 3 cups chicken broth

Instructions

  1. 1. Preheat oven to 400°F (200°C).
  2. 2. In an oven-safe skillet, spray with nonstick cooking spray and heat over medium. Season chicken with salt and pepper; add to skillet.
  3. 3. Sauté chicken until browned on both sides, then add minced garlic. Cook for about 1 minute until fragrant.
