Ingredients
- 1 1/2 cups crushed chocolate cookies
- 1/2 cup unsalted butter (melted)
- 8 oz dark chocolate (70% cocoa)
- 1/2 cup heavy cream (for filling)
- 1 cup granulated sugar
- 1/4 cup water
- 1/3 cup white or yellow miso paste
- 1/2 cup heavy cream (for caramel)
Instructions
- Preheat the oven to 350°F (175°C). Combine crushed cookies and melted butter in a bowl, press into a tart pan, and bake for 10 minutes. Let cool.
- For the miso caramel, heat sugar and water in a saucepan until dissolved. Boil until amber-colored, then whisk in butter and slowly add heavy cream followed by miso paste until smooth.
