  • 1 1/2 cups crushed chocolate cookies
  • 1/2 cup unsalted butter (melted)
  • 8 oz dark chocolate (70% cocoa)
  • 1/2 cup heavy cream (for filling)
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/3 cup white or yellow miso paste
  • 1/2 cup heavy cream (for caramel)

Instructions

  1. Preheat the oven to 350°F (175°C). Combine crushed cookies and melted butter in a bowl, press into a tart pan, and bake for 10 minutes. Let cool.
  2. For the miso caramel, heat sugar and water in a saucepan until dissolved. Boil until amber-colored, then whisk in butter and slowly add heavy cream followed by miso paste until smooth.
  3. In another saucepan, heat heavy cream to a simmer, then pour over chopped dark chocolate. Stir until melted and glossy.
  4. Pour half of the chocolate filling into the cooled crust, add the miso caramel layer evenly, then top with remaining chocolate filling.
  5. Refrigerate for at least two hours until set before serving.
