  • 8 oz cremini mushrooms, finely chopped

  • 2 tbsp Dijon mustard

  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Sauté mushrooms and shallots until moisture evaporates (5-7 minutes). Season with thyme, salt, and pepper.
  3. Season beef tenderloin with salt and pepper. Sear in another skillet over high heat until browned (2-3 minutes per side). Spread Dijon mustard over warm beef.
  4. Roll out puff pastry; cut squares large enough to enclose each piece of beef completely. Place sautéed mushrooms on the pastry before adding the beef.
  5. Fold pastry over beef, sealing edges tightly. Brush tops with beaten egg for a golden finish.
