Description

Ingredients

  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lime juice
  • 2 tbsp jalapeños (finely chopped)
  • 2 tbsp fresh cilantro (chopped)
  • Salt and pepper to taste

Instructions

  1. Hard boil the eggs by placing them in a saucepan covered with water. Bring to a rolling boil over medium-high heat, cover, and remove from heat; let sit for 12 minutes.
  2. Transfer the eggs to an ice bath for about 5 minutes to cool.
  3. Once cooled, peel the eggs under running water if needed. Cut in half lengthwise and scoop out yolks into a mixing bowl.
  4. Add mayonnaise, Dijon mustard, lime juice, jalapeños, salt, and pepper to the yolks. Mash until smooth but slightly chunky.
  5. Spoon or pipe the yolk mixture back into the egg whites and garnish with cilantro.
