- 1 cup cooked long-grain white rice
- 1 medium onion, finely chopped

- 2 tbsp fresh parsley, chopped
- ½ cup shredded mozzarella cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Clean the leeks by trimming the root ends and tough outer layers, then slice them in half lengthwise and rinse thoroughly under cold water.
- In a skillet over medium heat, sauté chopped onions until translucent. Add minced garlic and ground meat, cooking until browned. Season with salt, pepper, paprika, and parsley.
- Stir in the cooked rice until well combined. If desired, add shredded cheese for creaminess.
- Stuff each halved leek with the meat-and-rice mixture and arrange in the greased baking dish.
- Cover with foil and bake for 30 minutes. Remove foil for the last 10 minutes to crisp up the top.
