  • 4 large leeks
  • 1 lb ground beef (or turkey)
  • 1 cup cooked long-grain white rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 2 tbsp fresh parsley, chopped
  • ½ cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Clean the leeks by trimming the root ends and tough outer layers, then slice them in half lengthwise and rinse thoroughly under cold water.
  3. In a skillet over medium heat, sauté chopped onions until translucent. Add minced garlic and ground meat, cooking until browned. Season with salt, pepper, paprika, and parsley.
  4. Stir in the cooked rice until well combined. If desired, add shredded cheese for creaminess.
  5. Stuff each halved leek with the meat-and-rice mixture and arrange in the greased baking dish.
  6. Cover with foil and bake for 30 minutes. Remove foil for the last 10 minutes to crisp up the top.
