- 1 cup cherry tomatoes, halved

- 2 tbsp extra virgin olive oil

Instructions
- Rinse lentils under cold water and cook in a pot with 3 cups of water for about 20-25 minutes until tender.
- While lentils cook, chop cherry tomatoes, avocado, red onion, and cilantro.
- In a large bowl, combine cooked lentils (cooled), chopped vegetables, lime juice, olive oil, chili powder, salt, and pepper.
- Toss until all ingredients are well mixed.
