  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1/2 small red onion, thinly sliced
  • 1 cup corn (canned or fresh)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp extra virgin olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water and cook in a pot with 3 cups of water for about 20-25 minutes until tender.
  2. While lentils cook, chop cherry tomatoes, avocado, red onion, and cilantro.
  3. In a large bowl, combine cooked lentils (cooled), chopped vegetables, lime juice, olive oil, chili powder, salt, and pepper.
  4. Toss until all ingredients are well mixed.
