- 1 cup rolled oats
- 1 cup boiling water
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon salt
- ½ cup honey
- ⅓ cup vegetable oil or melted butter
- 1 large egg
- ½ cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- Place rolled oats in a bowl and pour boiling water over them. Let stand for 10 minutes until softened.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix honey, oil (or butter), egg, milk, and vanilla extract until smooth.
- Stir the softened oats into the wet ingredients.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
