Ingredients

  • 1 cup boiling water
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon salt
  • ½ cup honey
  • ⅓ cup vegetable oil or melted butter
  • 1 large egg
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Place rolled oats in a bowl and pour boiling water over them. Let stand for 10 minutes until softened.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, mix honey, oil (or butter), egg, milk, and vanilla extract until smooth.
  5. Stir the softened oats into the wet ingredients.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
