  • 9 whole wheat lasagna noodles
  • 1 cup part-skim ricotta cheese
  • 2 cups baby spinach, chopped
  • 1 cup shredded low-fat mozzarella cheese
  • 1 lb ground turkey or lean beef
  • 2 cups low-sugar marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, brown the ground turkey or beef. Drain excess fat and add marinara sauce and Italian seasoning; let simmer.
  3. In a bowl, mix ricotta, half the mozzarella, spinach, salt, and pepper.
  4. Spread marinara sauce at the bottom of the dish. Layer three noodles, half of the meat mixture, and half of the cheese mixture. Repeat layers and finish with remaining noodles and sauce topped with mozzarella.
  5. Cover with foil and bake for 25 minutes. Uncover and bake an additional 15-20 minutes until bubbly.
  6. Let cool for 5 minutes before slicing into squares.
