- 8 oz fresh mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 cup sour cream (full-fat)
- 1 tsp Dijon mustard
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Chop the onion and mince the garlic. Slice the mushrooms thinly.
- In a large skillet, heat olive oil over medium heat. Brown the ground beef until no pink remains (about 5 minutes). Remove from skillet.
- In the same skillet, sauté onions and mushrooms until softened (about 5 minutes). Add minced garlic and cook for an additional minute.
- Return browned beef to the skillet, pour in beef broth, and stir in Dijon mustard. Simmer gently for a few minutes.
- Lower the heat and mix in sour cream until smooth. Allow to thicken for about 3 minutes.
