  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs (room temperature)
  • 1 tbsp granulated sugar
  • 4 oz bittersweet chocolate (high cocoa content)
  • ½ cup heavy cream (whipped)
  • Edible gold dust

Instructions

  1. Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. In a saucepan, bring water and butter to a boil. Remove from heat and stir in flour and sugar until smooth. Let cool slightly, then add eggs one at a time until fully incorporated.
  3. Pipe small mounds of the dough onto prepared baking sheets.
  4. Bake for 20–25 minutes or until golden brown; do not open the oven during baking.
  5. While cooling, melt chocolate in a bowl over simmering water, then whisk in heavy cream until smooth.
  6. Once cooled, fill each profiterole with the chocolate cream using a piping bag and dust with edible gold before serving.
