  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh spinach leaves
  • 1/4 cup toasted pine nuts
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped

Instructions

  2. Butterfly the boneless turkey breast by slicing it horizontally without cutting all the way through.
  3. Drizzle olive oil over the turkey and season with salt and pepper. Press minced garlic and fresh herbs onto the surface.
  4. Spread spinach leaves evenly over the turkey, then sprinkle with toasted pine nuts.
  5. Roll the turkey tightly from one end to the other, securing it with kitchen twine.
  6. Place on a parchment-lined baking sheet and bake for 45-50 minutes or until it reaches an internal temperature of 165°F (74°C). Allow resting before slicing.
