This hearty stew simmers to perfection, delivering rich flavors that warm your soul on chilly evenings or during gatherings with loved ones. Simple yet satisfying, it’s a dish that promises to become a family favorite.

Ingredients

Scale
  • 2 lbs chuck roast, cut into 1-inch pieces
  • 4 medium yellow onions, thinly sliced
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • 2 bay leaves
  • 1 cup Gruyère cheese or mozzarella, shredded
  • 2 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, heat olive oil. Add the beef and sear until browned on all sides (about 4 minutes per side). Remove from pot and set aside.
  2. In the same pot, add the sliced onions. Cook low and slow until golden brown (approximately 20 minutes).
  3. Return the beef to the pot along with garlic, thyme, bay leaves, Worcestershire sauce, and beef broth. Bring to a simmer.
  4. Cover and reduce heat to low; simmer for about 2 hours or until beef is tender.
  5. Before serving, top each bowl with shredded cheese and let it melt under the broiler or naturally in the stew's warmth.
