- 2 cups low-sodium vegetable broth

- 1 cup mixed vegetables (bell peppers, carrots, peas)

- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
Instructions
- Rinse the freekeh under cold water until the water runs clear.
- In a large pot over medium heat, warm the olive oil and sauté the diced onion for about 5 minutes until translucent. Add minced garlic and cook for another minute.
- Stir in cumin and coriander along with salt and pepper; let cook for 30 seconds to release flavors.
- Add rinsed freekeh and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 25 minutes until tender.
- Fold in mixed vegetables and cook for an additional 5 minutes until heated through.
