  • 2 cups fresh spinach
  • 8 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté spinach until wilted, about 2 minutes. Mix in cream cheese, mozzarella, garlic powder, salt, and pepper until combined.
  3. Flatten the flank steak to an even thickness of about half an inch using a meat mallet.
  4. Spread the spinach mixture evenly over the steak, roll tightly from one end to the other, and secure with kitchen twine or toothpicks.
