- 12 oz pasta (penne or fusilli)
- 2 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- ¾ cup crumbled feta cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes (optional)
- Fresh parsley or basil, chopped
Instructions
- Preheat oven to 400°F (205°C).
- Place salmon on a baking sheet, drizzle with 1 tablespoon olive oil, and season with salt and black pepper.
- Bake salmon for 12–15 minutes until cooked through and flaky.
- Meanwhile, cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain.
- Heat remaining olive oil in a skillet over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Stir in cherry tomatoes, oregano, and red pepper flakes; cook for 3–4 minutes.
- Flake cooked salmon into the skillet and gently stir.
- Add pasta and feta cheese, tossing to combine. Add pasta water as needed for a creamy consistency.
- Garnish with fresh herbs and serve warm.
