Description

Feta Mediterranean Orzo Salad is a bright, refreshing dish made with tender orzo pasta, crisp vegetables, briny olives, and creamy feta cheese tossed in a light lemon dressing. Perfect as a side dish, lunch, or summer potluck favorite.


Ingredients

  • 1 cup orzo pasta
  • ¾ cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, finely diced
  • ¼ cup Kalamata olives, sliced
  • ½ cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • Optional: fresh parsley or basil, chopped

Instructions

  1. Cook orzo according to package instructions until al dente. Drain and let cool slightly.
  2. Transfer orzo to a large bowl.
  3. Add cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  4. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and black pepper.
  5. Pour dressing over orzo mixture and toss gently to combine.
  6. Garnish with fresh herbs if desired.
  7. Chill for 15–30 minutes or serve at room temperature.
