- 1 cup orzo pasta
- ¾ cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ¼ cup red onion, finely diced
- ¼ cup Kalamata olives, sliced
- ½ cup crumbled feta cheese
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- ½ teaspoon dried oregano
- Salt, to taste
- Black pepper, to taste
- Optional: fresh parsley or basil, chopped
Instructions
- Cook orzo according to package instructions until al dente. Drain and let cool slightly.
- Transfer orzo to a large bowl.
- Add cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- In a small bowl, whisk olive oil, lemon juice, oregano, salt, and black pepper.
- Pour dressing over orzo mixture and toss gently to combine.
- Garnish with fresh herbs if desired.
- Chill for 15–30 minutes or serve at room temperature.
