  • 1 cup cherries (fresh or canned, pitted)
  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan (10×15 inches) with parchment paper and lightly grease it.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt. In another bowl, beat eggs and vanilla until frothy. Gently fold the egg mixture into dry ingredients until just combined.
  3. Pour the batter into the prepared pan and spread evenly. Bake for 12-15 minutes or until a toothpick comes out clean.
  4. While cooling on a wire rack, mix pitted cherries with sugar if desired. Beat heavy whipping cream with powdered sugar until soft peaks form.
  5. Once the cake cools completely, remove it from the pan using parchment edges. Spread whipped cream over the surface followed by cherries. Carefully roll it up and cover with remaining whipped cream before serving.
