  • 2 cups short-grain sushi rice
  • 3 tbsp rice vinegar
  • 8 oz imitation crab meat
  • 1 ripe avocado
  • 1 medium cucumber
  • ½ cup tempura flakes
  • 4 sheets nori (seaweed)
  • Low-sodium soy sauce (for serving)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with equal parts water according to package instructions. Mix in rice vinegar while fluffing with a fork after cooking.
  2. Slice avocado into strips and julienne cucumber into matchsticks.
  3. Lay a bamboo mat flat and place a sheet of nori on top. Wet hands to prevent sticking and spread sushi rice evenly over nori, leaving one inch at the top.
  4. Layer imitation crab, avocado strips, and cucumber in the center of the rice-covered nori.
  5. Roll tightly from the bottom edge using the bamboo mat for support. Seal with a little water on the exposed nori edge.
  6. Slice rolls into bite-sized pieces with a sharp knife and serve with soy sauce.
