Description

Crockpot Pepper Steak is a savory, tender slow-cooker meal made with sliced beef, bell peppers, and onions simmered in a rich, flavorful sauce. This easy hands-off dinner is perfect for busy days and pairs beautifully with rice or noodles.


Ingredients

  • 1 ½ lbs flank steak or sirloin, thinly sliced
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • ¾ cup beef broth
  • ½ cup soy sauce (or tamari)
  • 2 tablespoons brown sugar
  • 1 teaspoon ginger powder
  • 1 teaspoon sesame oil

Instructions

  1. Toss sliced beef with cornstarch, salt, and black pepper.
  2. Heat olive oil in a skillet over medium-high heat and quickly sear beef for 1–2 minutes (optional but adds flavor).
  3. Transfer beef to the crockpot.
  4. Add bell peppers, onion, and garlic on top of the beef.
  5. In a bowl, whisk beef broth, soy sauce, brown sugar, ginger powder, and sesame oil.
  6. Pour sauce over everything in the crockpot.
  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender.
  8. Stir before serving and serve hot over rice or noodles
