- 1 ½ lbs flank steak or sirloin, thinly sliced
- 2 tablespoons cornstarch
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- ¾ cup beef broth
- ½ cup soy sauce (or tamari)
- 2 tablespoons brown sugar
- 1 teaspoon ginger powder
- 1 teaspoon sesame oil
Instructions
- Toss sliced beef with cornstarch, salt, and black pepper.
- Heat olive oil in a skillet over medium-high heat and quickly sear beef for 1–2 minutes (optional but adds flavor).
- Transfer beef to the crockpot.
- Add bell peppers, onion, and garlic on top of the beef.
- In a bowl, whisk beef broth, soy sauce, brown sugar, ginger powder, and sesame oil.
- Pour sauce over everything in the crockpot.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender.
- Stir before serving and serve hot over rice or noodles
