Description

Ingredients

  • 12 oz pasta (penne or fettuccine)
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • ¾ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 cup fresh spinach

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Season chicken with salt, pepper, and Italian seasoning.
  4. Add chicken to skillet and cook until golden and cooked through. Remove and set aside.
  5. In the same skillet, add garlic and cook for 30 seconds.
  6. Stir in sun-dried tomatoes, heavy cream, and chicken broth. Simmer for 3–4 minutes.
  7. Add Parmesan cheese and stir until sauce thickens.
  8. Stir in spinach until wilted.
  9. Return chicken and cooked pasta to the skillet and toss to coat.
  10. Serve warm.
