- 8 oz fettuccine pasta
- 1 lb sirloin steak (or ribeye)
- 1 cup heavy cream
- 4 cloves garlic (minced)
- 1 cup freshly grated Parmesan cheese
- 3 tbsp butter
- 1 cup low-sodium beef broth
- Salt and pepper to taste
Instructions
- Cook the fettuccine in a large pot of salted boiling water until al dente, following package instructions. Drain and set aside, reserving 1 cup of pasta water.
- Season the steak with salt and pepper. In a skillet over medium-high heat, melt 1 tablespoon of butter and sear the steak for about 4-5 minutes per side until browned. Remove from heat and let rest before slicing thinly against the grain.
- In the same skillet, add more butter if needed and sauté minced garlic for about 30 seconds until fragrant.
- Pour in the beef broth and bring to a simmer. Slowly stir in heavy cream and allow to thicken slightly.
- Add sliced steak and cooked fettuccine to the skillet, tossing everything together. If too thick, mix in reserved pasta water until desired consistency is reached.
- Finish by stirring in grated Parmesan cheese until melted and creamy. Adjust seasoning as needed before serving.
