  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 2 cups fresh cranberries
  • Zest and juice of 2 oranges

Instructions

  1. 1. Preheat oven to 350°F (175°C). In a mixing bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of a springform pan. Bake for 8 minutes until golden brown, then let cool.
  2. 2. In another bowl, beat cream cheese and sugar until smooth. Add sour cream, orange zest, and juice; mix well. Incorporate eggs one at a time on low speed until blended.
  3. 3. Gently fold in half the cranberries into the filling. Pour over the cooled crust and scatter remaining cranberries on top.
  4. 4. Bake for about an hour or until edges are set but slightly jiggly in the center. Cool in oven for an hour with door ajar.
