Description

Corned Beef Hash is a classic, hearty skillet dish made with crispy potatoes, savory corned beef, and onions. Golden and comforting, it’s perfect for breakfast, brunch, or an easy anytime meal—especially topped with a fried egg.

Ingredients

Scale
  • 2 cups cooked corned beef, diced
  • 2 cups cooked potatoes, diced (russet or Yukon gold)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ cup diced onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: chopped parsley, fried eggs (for serving)

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add diced onion and cook until softened, about 3–4 minutes.
  3. Add potatoes and spread into an even layer. Cook undisturbed for 4–5 minutes until crispy.
  4. Stir in diced corned beef, salt, and black pepper.
  5. Press mixture down lightly and cook another 4–6 minutes, stirring occasionally, until golden and crispy.
  6. Taste and adjust seasoning.
  7. Serve hot, topped with fried eggs or parsley if desired
