Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Add diced onion and cook until softened, about 3–4 minutes.
- Add potatoes and spread into an even layer. Cook undisturbed for 4–5 minutes until crispy.
- Stir in diced corned beef, salt, and black pepper.
- Press mixture down lightly and cook another 4–6 minutes, stirring occasionally, until golden and crispy.
- Taste and adjust seasoning.
- Serve hot, topped with fried eggs or parsley if desired
