  • 1 cup full-fat coconut milk
  • 3 tbsp granulated sugar
  • 1/2 cup creamy peanut butter
  • 2 tbsp powdered sugar (for dusting)

Instructions

  1. Line a square baking dish with parchment paper.
  2. In a mixing bowl, combine glutinous rice flour, granulated sugar, and coconut milk until smooth.
  3. Transfer the mixture to a microwave-safe bowl, cover with plastic wrap, and microwave in two-minute intervals, stirring between each interval for 6-8 minutes until thick and translucent.
  4. Allow the dough to cool slightly. Dust your hands with cornstarch or powdered sugar, take small pieces of dough, flatten them in your palm, place half a teaspoon of peanut butter in the center, fold over, and seal tightly.
  5. Place the shaped mochi in the lined baking dish. Cover with plastic wrap and refrigerate for at least one hour.
