- 1 cup ube halaya (purple yam jam)
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together ube halaya and granulated sugar until fluffy. Add eggs one at a time followed by vanilla extract.
- Gradually incorporate dry ingredients into the wet mixture until just combined; the dough should be thick but sticky.
- Chill the dough for at least one hour in the refrigerator.
- Roll tablespoons of chilled dough into balls and coat each ball generously with powdered sugar. Place on prepared baking sheets about two inches apart.
- Bake for 12-15 minutes until edges are set and centers remain soft. Let cool slightly before serving.
