  • 23 pounds beef tenderloin
  • 2 cups fresh spinach, chopped
  • 1 cup cremini or button mushrooms, chopped
  • 8 oz cream cheese, softened
  • 3 cloves garlic, minced
  • 2 sprigs fresh thyme, chopped
  • 2 sprigs fresh rosemary, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Trim excess fat from the beef tenderloin and butterfly it by slicing it lengthwise down the center without cutting all the way through.
  3. In a skillet over medium heat, add olive oil and sauté mushrooms and garlic until golden brown. Add spinach until wilted. Mix in cream cheese and herbs; season with salt and pepper.
  4. Spread the stuffing evenly onto one side of the butterflied tenderloin, fold over, and secure with twine or toothpicks.
  5. Sear each side of the stuffed tenderloin in a hot skillet for about three minutes until browned.
  6. Transfer to a baking dish and roast for 25-30 minutes or until an internal temperature of at least 145°F (63°C) is reached.
