Ingredients
- 2 cups heavy cream
- 4 large egg yolks
- 1/2 cup granulated sugar

Instructions
- Preheat the oven to 325°F (160°C). Arrange six ramekins in a baking dish.
- In a saucepan over medium heat, combine heavy cream, vanilla extract, nutmeg, and cinnamon; heat until hot but not boiling.
- In a mixing bowl, whisk together egg yolks and sugar until pale and slightly thickened.
- Gradually stir half of the hot cream mixture into the egg yolk mixture while whisking continuously. Then mix in the remaining cream.
- Strain this mixture into ramekins, filling them three-quarters full. Pour hot water into the baking dish around them and bake for 30-35 minutes until just set but still wobbly in the center.
- Cool before chilling in the fridge for at least two hours or overnight. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
