  • 2 cups heavy cream
  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 tsp freshly grated nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C). Arrange six ramekins in a baking dish.
  2. In a saucepan over medium heat, combine heavy cream, vanilla extract, nutmeg, and cinnamon; heat until hot but not boiling.
  3. In a mixing bowl, whisk together egg yolks and sugar until pale and slightly thickened.
  4. Gradually stir half of the hot cream mixture into the egg yolk mixture while whisking continuously. Then mix in the remaining cream.
  5. Strain this mixture into ramekins, filling them three-quarters full. Pour hot water into the baking dish around them and bake for 30-35 minutes until just set but still wobbly in the center.
  6. Cool before chilling in the fridge for at least two hours or overnight. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
