Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish or line with parchment paper.
- In a bowl, combine flour and granulated sugar. Cut in the cold butter until crumbly. Press into the bottom of the prepared dish and bake for 15 minutes until lightly golden.
- In another bowl, whisk together eggs, lemon juice, and remaining sugar until frothy. Sift in flour to thicken the filling.
- Pour the lemon mixture over the baked crust and return to the oven for an additional 20-25 minutes until set but slightly jiggly in the center.
- Let cool completely before slicing into squares. Dust with powdered sugar before serving.
