Ingredients
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 6 oz dark chocolate (70% cocoa)
- 3/4 cup heavy cream
- 1 cup fresh raspberries
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour, cocoa powder, and sugar. Cut in cold butter until crumbly.
- Press mixture into a tart pan evenly across the bottom and up the sides. Bake for 15-20 minutes until set but not browned. Let cool.
- In a saucepan over medium heat, warm heavy cream until just simmering. Remove from heat, add chopped dark chocolate, and stir until smooth.
- Pour half of the chocolate filling into the cooled tart shell, arrange fresh raspberries on top, then cover with remaining filling.
- Refrigerate for at least two hours or until fully set. Slice and serve chilled or at room temperature.
